Having been founded in 1887, Atlas Olive Oils is a family-owned company that has maintained a four-generation legacy in olive oil production. We solely produce organic extra virgin olive oil (EVOO) from our certified family farms, earning the trust of Michelin-starred chefs and establishing our position as a beacon of Moroccan culinary excellence.
One of the distinctive aspects of our oil is its high hydroxytyrosol concentration, stemming from the unique conditions of our desert environment. Enduring extreme heat—up to 127°F—and challenging soil conditions prompts the olive trees to produce an abundance of polyphenols, essential for their survival. Consequently, this leads to an oil rich in antioxidants, elevating the quality of our EVOO.

Our organic extra virgin olive oil boasts a blend of traditional and modern cultivars, encompassing varieties such as the bicentennial Picholine du Languedoc and contemporary Arbequina. The olives hail from our 245 hectares of olive groves in the Marrakech region, situated at an altitude of 390 meters above sea level. Our well-balanced soil comprises 30% clay, 35% loamy, and 35% sandy, creating ideal conditions for olive trees.
With a production capacity of 25,000 liters from our ancient orchards and 450,000 liters from modern groves, we maintain stringent quality control, ensuring max acidity levels of 0.4° and 0.2° respectively. The harvesting season extends from late September through December. Our extraction techniques involve cold pressing at temperatures not exceeding 26°C, utilizing a two-phase continuous system that maximizes yield efficiency.
