Rich in polyphenols, especially Hydroxytyrosol, our olive oil benefits from the extreme conditions of the desert landscape—where temperatures can reach up to 127°F in summer amid rocky soil and limited water sources. The stress put on the olive trees elicits a survival response, leading them to generate a remarkable amount of polyphenols, thereby enhancing the antioxidant content of our oil.

The harvest occurs from late September to December, with a focus on maintaining low acidity levels (0.2° max in modern orchards). The extraction process, conducted at a maximum temperature of 26°C using a two-phase continuous system, yields high-quality oil with a yield ranging from 11.5% to 15%.
